Ingredients:
• 6 chicken breast
• 1/4 cup of olive oil
• 2 spring onions
• 1 teaspoon minced garlic
• 3 teaspoon dried rosemary
• 1 tablespoon fresh chopped dill
• 1/2 teaspoon tarragon
• Juice of 2 lemons
• Grated skin of 1 lemon
• Black pepper
• Salt

Instructions:
1. Clean the chicken. Preferably use chicken breast with the bones.
2. In a blender mix together freshly squeezed lemon juice, zest of one lemon, garlic and dried and fresh herbs. Add salt and freshly ground black pepper. Blend until smooth.
3. Chop the green onions and add them to the mixture above.
4. Place the chicken in a bowl and pour the lemon, herb and green onion mixture over it. Coat the chicken well with this marinate.
5. Put in a refrigerator and let it marinate for 2 hours. Ideally, it should be left overnight.
6. Take the chicken out of the marinate mixture. Butter a baking tray lightly and put the chicken over it. Cover with aluminum foil and bake for 40 minutes at 360 F.
7. Put the left over marinate in a saucepan and let cook on low heat until a thick sauce is left.

Ingredients:
• 2 chicken breast
• 2 cups boiled black beans
• 2 cups cooked corn
• 2 cups of your favorite tomato salsa
• 1 teaspoon red chili flakes
• 4 green chilies
• 1/4 cup fresh chopped coriander
• 1 cup Mexican cheese of your choice
• 1 tablespoon Olive oil
• Salt, to taste

Instructions:
1. Wash the chicken and trim off any excess fat.
2. Chop the green chilies.
3. Mix half of the chopped green chilies, black pepper, salt and red chili flakes in olive oil.
4. Rub this mixture over the chicken. Put in a refrigerator and let it marinate for 4 hours.
5. If using canned beans and corn, wash them with fresh water and drain properly.
6. Add the corns and beans to the salsa. Put in the remaining green chilies and chopped fresh coriander.
7. Put half of this mixture in a baking tray. Now put the chicken breast pieces in the baking dish and top with remaining salsa mixture.
8. Preheat the oven to 380 F.
9. Cover the baking dish with an aluminum foil and place in the oven.
10. Turn the chicken once or twice while baking.
11. Bake for 30 minutes and then remove the foil and let it cook for some more time so the juices could evaporate.
12. Sprinkle with shredded Mexican cheese when chicken is done and bake until cheese melts.
