Ingredients:
10 pounds beef brisket, fat trimmed
5 pieces bacon
1/4 cup of oil
2 tablespoons thyme
1 cup onion, minced
1/2 lemon
1 1/2 cup beef broth
Salt and pepper to taste
For the dry rub
1 tablespoon garlic powder
1 tablespoon paprika
1 tablespoon onion powder
2 tablespoons seasoned salt
1 tablespoon black pepper
1 tablespoon sugar
1 tablespoon vinegar

Instructions:
1. Prepare the grill by adding wood chips of your choice for smoky flavor or charcoal. Preheat the oven at 250 degrees F.
2. Combine all the ingredients for the dry rub and rub it briskly on the brisket making sure that all the sides are coated with the marinade.
3. Cook the bacon for 2-3 minutes in a saucepan. Add the onions and cook until the onions are translucent.
4 Add oil, thyme, beef broth, lemon and season with salt and pepper.
5. Let it simmer for 15 minutes until it is syrupy in consistency. Set aside.
6. Place the beef brisket on the grill over a drip pan for 2 hours, basting it every 30 minutes to ensure that the flavors are infused in the brisket.
7. Once all the sides are basted and created a crust of caramel-like coat, transfer it in the oven 250 degrees F and cook for 4 hours.
8. Check if it is tender enough that the meat falls out by itself. Carve and serve with mashed potatoes and sautéed vegetables.

4 pounds of beef brisket, cut into chunks
2 tablespoons of flour
1 teaspoon of dried oregano
1 teaspoon of onion powder

2 pounds of potatoes, cubed
1 onion, peeled and sliced
1 pound of carrots, cubed
1/2 pound of button mushrooms, halved
1 head of garlic, peeled
1 pack of mushroom gravy mix
1 can of tomato sauce
1 pack of onion soup mix
1 cup of water
Salt and pepper to taste

Instructions:
1. Preheat the oven to 350 degrees F.
