Ingredients:
1 pound of ground beef, lean part
4 cloves of garlic, minced
1 cup of onion, chopped
3 tablespoons of oil
2 tablespoons of chili powder
1/2 teaspoon of oregano
3 1/2 cups of tomato sauce
1 teaspoon of ground cumin
Salt and pepper to taste
4 cups grated cheddar cheese (you can also use a combination of Monterey jack cheese with cheddar)
Oil for frying the tortillas
1 cup chopped olives for garnish

Instructions:
For the Enchilada Sauce:
1. Saute 2 cloves of garlic and 1/2 cup of onions in 1 tablespoon of oil until the onions are translucent.
2. Add tomato sauce, oregano, chili powder, salt and pepper and simmer for 10 minutes or until the sauce is thick.

For the Beef Enchilada recipe filling
1. Preheat the oven at 350 degrees F.
2. In a skillet, sauté the ground beef, onions, garlic under low heat for 10 minutes until the beef is no longer pink in color. Drain the grease.
3. Season the beef with salt and pepper and add 1/2 cup of the prepared Beef Enchilada sauce.
4. Pour the remaining 1/2 cup of the sauce into a bowl and dip individual enchilada.
5. Top with cheese and bake it for 5-10 minutes until the cheese melts.
6. Top with chopped olives.

Ingredients:
1 pound of ground beef
1 onion, chopped
1 1/4 cup of barbecue sauce (any variant)
8 corn tortillas
1 cup of cheddar cheese, grated
For the Salsa:
2 tomatoes, chopped
1 clove of garlic, chopped
1 green chili, chopped
1 jalapeno, chopped
1/4 cup of fresh cilantro, chopped
1 tablespoon of lime juice
1 teaspoon of olive oil
Salt and pepper to taste

Instructions:
1. Make the salsa by combining the tomatoes, green chili, jalapeno, lime juice, cilantro, olive oil, salt and pepper.
2. Brown the ground beef is a non stick pan for 5-10 minutes until the beef is no longer pink and drain the grease.
3. Add the barbecue sauce and allow to simmer under low heat for 10 minutes stirring occasionally.
4. Heat the tortillas in a griddle and stuff the ground barbecue beef mixture and the salsa mixture. Roll the tortilla and place it in a baking dish.
5. Top with cheese and bake it in the oven for 5-10 minutes or until the cheese is melted.
6. Serve hot.
