Beef Ribs

Beef Ribs or Beef Short Ribs are normally larger, meatier and more tender than pork ribs.


They range from 10 inches square which are about 3-5 inches thick and have 3-4 individual ribs. The meat in the ribs is very tender and tasty. It is also very easy and fast to cook. Barbecue Beef Short Ribs with No Mayo Coleslaw

Try this finger licking good Barbecue Beef Short Ribs as your weekend meal and you will be a superstar in your family once they tasted it combined with a healthier version of classic coleslaw, a no mayo version.

Ingredients:
3 1/2 pounds of beef short ribs
1 clove garlic, minced
1 cup of tomato ketchup
1/4 cup red wine vinegar
1 tablespoon paprika
1 teaspoon chili powder (optional)
1/2 teaspoon dry mustard
1/4 cup water
1 teaspoon Worcestershire sauce
1 tablespoon cornstarch
Salt and pepper to taste

For the No Mayo Coleslaw:
1 cup of cabbage, shredded
1 cup of carrots, shredded
1/2 cup green onions, sliced thinly
1/2 cup of rice wine vinegar
1 teaspoon of sugar
Salt and pepper to taste

Instructions:
1. In a bowl, combine water, vinegar, chili powder, ketchup, mustard, garlic, Worcestershire sauce and salt and pepper.
2. Marinade the beef ribs into the mixture for a minimum of an hour maximum of 8 hours. The longer you marinade the beef ribs the deeper the flavor.
3. Grill over a charcoal grill for a smoky flavor, or stove top grill on high heat. Cook for 2 minutes per side.
4. For the no mayo coleslaw, combine the rice wine vinegar, sugar, salt and pepper. Once the sugar is dissolved, mix in the vegetables. Chill.
5. Plate the Grilled Beef Ribs into a plate and serve it with the chilled coleslaw. You can also serve it with grilled corn for a complete meal.

Mas-issneun yoli (a delicious dish) as they say in Korean. This beef short rib recipe is made by marinating the beef short ribs into a Korean marinade. The marinade has pear juice in it which makes the beef ribs tender and juicy.

Ingredients:
1 pound of Beef Short Ribs
1 tablespoons of ginger juice
3/4 cups of sugar
1 cup soy sauce
1 cup of freshly squeezed pear juice
1/2 cup of water
1 onion, minced
3 tablespoons of garlic, minced
4 tablespoons sesame oil
Pepper to taste
Sesame seeds for garnish
Side dishes/accompaniments
Kimchi
Rice
Grilled onion and mushrooms

Instructions:
1. In a large bowl, mix in water, pear juice, sugar, pepper, sesame oil, soy sauce, onion and garlic. Mix until the sugar is dissolved.
2. Marinade the beef ribs for an hour, marinade longer for a deeper taste.
3. Grill over a charcoal grill for 2-3 minutes each side. You can grill some onions and mushrooms as well.
4. Sprinkle sesame seeds on top; normally it is eaten with Korean side dishes like kimchi, rice and grilled onions and mushrooms.

Spanish Style Beef Short Ribs Stew Recipe

Put the ole in your beef ribs with this spicy Spanish inspired beef ribs dish. It is also a one pot stew where the longer it sits, the richer it tastes.

Ingredients:
4 pounds of beef short ribs
1 tablespoon of hot paprika
4 strips of bacon or pancetta
1 onion, chopped
4 cloves of garlic, minced
1 can of diced tomatoes
2 pounds of starchy potatoes, cut into chunks
2 carrots cut into chunks
1/2 cup of flour
1 bottle of light beer or ale
Salt and pepper to taste

Instructions:
1. Combine the hot paprika, flour, salt and pepper. Coat the beef ribs into the flour mixture. Set aside.
2. Brown the bacon or pancetta into a pan. Remove the bacon or pancetta and brown the coated beef ribs into the pan. It will take about a minute per side.
3. Add the onions, carrots, potatoes, canned tomatoes, and the light beer or ale.
4. Stir it in and stew away under low heat for 1 hour and 45 minutes up to 2 hours or cook it in the oven at 220.
5. Serve it over hot steaming rice or mashed potatoes and top with chopped bacon or pancetta.
