Classic American Beef Stew Recipe

This delicious and hearty stew is a classic from all the hand me down American cookbooks. You can serve this Classic Beef Stew recipe with crusty bread or home made biscuits for a complete meal. Serves 6-8

Ingredients:
1 1/2 kilos beef for stew (chuck), cut into chunks
1 tablespoon of olive oil
1 1/2 cups onion, chopped
4 pieces of bacon, diced
1 dry bay leaf
3 tablespoons of flour
6 cups beef broth (you can also use veal broth which is milder)
2 cups carrots, chopped
1 cup celery, sliced
1 baking potato, cubed
1 cup green peas
8 ounces mushrooms, sliced
1 tablespoon of cornstarch slurry or flour slurry (flour/cornstarch with water as thickener)
Salt and pepper to taste

Instructions:
1. Cook bacon until crisp in a pan or in a Dutch oven.
2. Coat beef stew chunks with flour seasoned with a pinch of salt and pepper. Brown the beef with 2 teaspoon of olive oil. Once the beef is brown at all sides, add the bacon back to the mixture.
3. Add the remaining olive oil. Add the onion, celery and mushrooms. Cook the vegetables and beef on medium heat.
4. When the onions are soft and translucent. Add the beef broth and dry bay leaf. Cover and let it simmer for 45 minutes under low heat.
5. Add carrots and potatoes and simmer for 25 minutes or until the vegetables and meat are fork tender.
6. Add in a cup of green peas and simmer for another 10 minutes. Season with salt and pepper to taste. If you want a thicker soup, you can add the cornstarch slurry and simmer for 5 minutes.

Tagine beef stew recipe is an easy to prepare one pot meal for the whole family. This Moroccan inspired beef stew is just amazing on top of couscous or rice. Serves 6-8

Ingredients:
1 1/2 kilos beef chuck, cubed
1 cup of water
2 teaspoons Paprika
300 grams of chick peas
900 grams baby potatoes
1/2 cup Olive Oil
2 sliced onion
6 carrots, diced
900 grams potatoes, quartered
4 tablespoons parsley, chopped
2 tablespoon coriander, chopped
Salt and pepper to taste

Instructions:
1. Heat the tagine and add olive oil.
2. Season the beef cubes with salt and pepper. Sauté the onions into the tagine until soft.
3. Add the beef cubes and brown it at all sides.
4. Once the beef is golden brown at all sides, add the potatoes, chick peas and carrots.
5. Season with paprika, salt and pepper. Add 1 cup of water and simmer under low heat for 45 minutes or until the meat is fork tender.
6. Add chopped parsley and coriander. You can also add preserved lemons.
7. Serve hot on top of cooked couscous or rice and mango chutney.

Bo Kho is a Vietnamese beef stew recipe which is slowly simmered and it is seasoned to perfection. This beef stew recipe is perfect pair with toasted French baguette or rice noodles.

Ingredients:
1 kilo beef shank, cubed
2 beef tendon strips
1 teaspoon ginger, minced
1 stalk of lemongrass, pounded
2 bay leaves
4 cups of beef broth
4 medium sized carrots, sliced diagonally
2 tablespoons annato seed oil (for color)

For the marinade:
1 tablespoon garlic, minced
1 tablespoon shallots, diced
1 tablespoon lemon grass, minced
1/2 tablespoon fish sauce
1/2 teaspoon red chili powder
1 tablespoon paprika
1/4 teaspoon cinnamon
1/4 teaspoon clove powder
1/4 teaspoon anise powder
1 teaspoon ground pepper
1 teaspoon sugar

Instructions:
1. Marinade the cubed beef shank for at least 45 minutes (if you have time the longer the better. You can marinade it up to 2 hours).
2. In a Dutch oven or stew pot, Brown the beef in annatto seed oil. Add the beef broth, lemon grass, bay leaves and beef tendons. You may need to add more broth or water to just cover and submerge the beef. You can add some more broth or water to cover the beef.
3. Let it simmer under low heat for 1 hour. Add the carrots and cook for 10 minutes. Season with salt and pepper to taste.
4. This beef stew recipe is better served hot with Toasted French baguette on the side or put on top of rice noodles.
