This is one of the beef recipes is a sumptuous mix of a creamy and tangy sauce with a perfectly spiced juicy beef tenderloin fillet.

For the creamy gorgonzola sauce:
2 cups of gorgonzola cheese, crumbled
1 cup of parmesan cheese, grated
950 ml of heavy cream
A pinch of ground nutmeg
Salt and pepper to taste

For the fillet rub
6 pieces of beef tenderloin (8 ounces fillet mignon)
1 tablespoon of garlic powder
1 tablespoon of onion powder
1 tablespoon of lemon pepper
2 cups of fried bacon, chopped
1 cup of green onions, chopped
Salt and pepper to taste

1. Heat the heavy cream in a saucepan over medium low heat.
2. Add gorgonzola cheese, nutmeg, parmesan cheese, salt and pepper.
3. Fry the bacon or cook it in the oven for 10 minutes until golden brown. Place in a paper towel to remove excess oil and chop into bits. Set aside.
4. Season the beef tenderloin with salt and pepper, garlic powder, onion powder and lemon pepper.
5. Cook the fillet into an outdoor grill or in the oven at 350 degrees F for 10-15 minutes until desired doneness. Let the fillet rest for 5-10 minutes.
6. Pour the creamy gorgonzola sauce on top of the grilled beef tenderloin. Garnish with green onions and bacon.

3. Cut the beef tenderloin in the middle to make a pocket. Fill the pocket with 1-2 teaspoons of the crab stuffing. Wrap the stuffed steak with a bacon strip and secure with a toothpick.
4. Cook the beef tenderloin fillet to the desired doneness. Let it rest for 5-10 minutes.
5. Top it the peppercorn sauce or serve with the peppercorn sauce separately.

1 pound of beef tenderloin, cubed
2 tablespoons of oil
4 cloves of garlic, chopped
1 pound of baby potatoes, halved
2 carrots, cubed
1 cup of mushrooms, quartered

1 tablespoon of red wine vinegar
1 bottle of ale or beer
1 onion, chopped
2 sprigs of thyme
1 teaspoon of Dijon mustard
1 cup of parsley, chopped
1 teaspoon of flour
1 cup of sliced sausage or chorizo (optional)
1 dry bay leaf
Salt and pepper to taste

1. Season the beef tenderloin with salt and pepper. Brown the meat at all side and set aside.
