4 cups chicken stock (you can use instant chicken stock)
1 cup shrimps (shelled but heads must be in tact)
1 cup fresh coconut milk
1 stalk crushed lemon grass
1 clove of garlic (minced)
1 knob of ginger (sliced thinly)
1/4 cup chopped coriander leaves
4 teaspoons chili pepper (minced)
1 teaspoon lime juice
1 tablespoon vegetable oil
Salt and pepper to taste

1. In a large stock pot, sauté the garlic and ginger with the oil. Add in the lemon grass and shrimps. Cook for 3 minutes. Add in the stock and let boil.
2. After 10 minutes of boiling, lower down the heat and add the chili pepper, coriander leaves, lime juice and coconut milk. Stir in the salt and pepper. Taste and adjust the seasonings accordingly.
3. Simmer for about 2 minutes more. Remove from heat and serve warm.
