The chocolate cake is not just delicious; it is also believed to be nutritious. Chocolates are made from cocoa which are rich in polyphenols. Polyphenols are a type of anti-oxidants that make your skin glow and fight degenerative diseases such as cancer. This is by far the best chocolate recipe that I have tried. To make it more luscious, I used milk chocolate instead of buttermilk chocolate.

The chopped chocolate and coffee will thin out the batter, thus giving a moist and lighter cake. This will yield two-10 inch round cakes.

Ingredients:
4 oz. semi-sweet chocolate, finely chopped
1 1/4 cups hot brewed or instant coffee
2 cups of all-purpose flour (sift the flour first before measuring)
1 1/4 cups cocoa powder (unsweetened)
3 cups granulated sugar2 tsp. baking soda
3/4 teaspoons baking powder
1 teaspoon salt
3 large eggs, room temp.
3/4 cups oil
1 1/4 cups buttermilk (if there is no buttermilk available, add 2 tsp. of vinegar or lemon juice to regular milk)
1 teaspoon of vanilla extract

Instructions:
1. Pre-heat oven to 300 degrees Fahrenheit. Line two round 10-inch cake pan with wax paper.
2. In a large bowl, beat the eggs on high until they are light and lemon colored. Add the rest of the ingredients until well combined.
3. Next, add the hot mixture of chocolate and coffee. This will make the batter thin. Pour into prepared pan. Bake 300 degrees for 1 hour or until the cake springs back when pressed.
4. Let cool on a wire rack. Remove from pan and discard the wax paper.

Ganache or Chocolate Frosting Recipe

Ingredients:
1 cup all-purpose cream
2 tablespoons of granulated sugar2 tablespoons corn syrup
500 grams semi-sweet chocolate (chopped)
2 tablespoons unsalted butter (melted)

Instructions:
1. In a sauce pan, boil the cream, sugar and corn syrup.
2. In a mixing bowl, put the chopped chocolate and pour in the boiling cream mixture.
3. Stir the ganache until well combined and add the melted butter for added sheen.

To Assemble the Cake:
1. Place a wire rack on top of the jelly roll pan.
2. Fill one cake with the chocolate frosting and put the other cake on top of the other.
3. Pour the rest of the chocolate frosting on the cake. Let the frosting drip to ensure even distribution.
4. Pipe the cake with borders if desired on put fresh strawberries as garnish.
5. Chill before serving into slices.

Ingredients:
1/2 cup unsalted butter (softened)
1 cup of granulated sugar2 eggs
1 teaspoon vanilla
1 cup buttermilk
1 cup mashed potato
1 3/4 cups all-purpose flour (sifted)
1/3 cup of cocoa powder
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of cinnamon

Instructions:
1. Pre-heat oven to 350 degree Fahrenheit and grease and line a 9 inch cake pan.

7. To make orange-flavored cake, you can replace the cinnamon to 2 teaspoons of orange zest.
