Ingredients:
• 250 g boiled or canned chickpeas
• Juice of 2 lemons

• 2 tablespoon tahini

For tahini:
• 1/2 cup sesame seeds
• 2 tablespoon olive oil

Instructions:
For tahini:
Preheat an oven to 380 degrees Fahrenheit and place the sesame seeds in a baking tray. Roast the seeds for 5-10 minutes and stir once or twice to avoid burning the seeds. Put the seeds in a blender with olive oil and blend to smooth paste. This tahini paste can be stored for up to a week in an air tight container.
For hummus:
1. Drain the freshly boiled chickpeas and place them in a food processor. If you are using canned chickpeas, first put the chickpeas along with their liquid in a pan and boil for a few minutes so the chick peas are hot.
2. Add olive oil, tahini paste, salt, cumin seeds, lemon juice, garlic paste and red chili powder to the food processor.
3. Blend until smooth. If the paste is too thick, add more olive oil until the desired consistency is achieved.
4. Garnish with roasted nuts, chopped tomatoes and parsley. Serve hot.

• 2 cups hummus

• 1 medium sized red onion
• Salt

Instructions:

2. Slice the bell peppers length-wise. Heat a tablespoon of oil in a pan and stir fry for 2 minutes.
3. Grease a baking dish and place the chicken breast pieces along with the marinate juices.
4. Cut onions into 1 inch pieces and add to the baking dish.
5. Cover the baking dish with aluminum foil and place the dish in an oven preheated to 400 F. bake for 40 minutes or until chicken is done.
6. Remove the foil and add the fried bell peppers.
7. Cook at high heat for 5-10 minutes to evaporate the juices and lightly char the vegetables.

Ingredients:
• 1 cup hummus
• 3 medium sized potatoes
• 1/2 cup melted butter
• 4 tablespoon chopped spring onions
• Salt
• Coarsely ground black pepper
• 1/2 cup grated cheddar cheese

Instructions:
1. Scrub the potatoes and wash them well. Keep the skin but remove any blemishes.
2. Prick them with a fork to let the steam escape during baking.
