Ingredients:
• Cooking oil, 1/2 cup
• Fennel seeds, 1 tablespoon
• Soy sauce, 2 tablespoons
• Belly portion of pork (off the bone), 2 1/2 kg
• Coriander seeds, 1 tablespoon
• Star anise, 2 pieces
• Root ginger (grated), 1 teaspoon
• Rice plums (stoned and quartered), 3 pieces
• Wine vinegar, 2 tablespoons
• Cinnamon stick, 1 piece
• Brown sugar, 4 tablespoons

Instructions:
1. Preheat the oven to 220C of gas and 240C of fan.
2. Cut the skin of the meat with a crosswise pattern.
3. Put soy sauce and some oil on the pork.
4. In a bowl, crush the seeds and a whole star anise.
5. Rub the mixture on the pork, and reserve at least 1 teaspoon for later use.
6. Put the pork on a rack inside the oven. Roast the meat for half an hour.
7. Reduce the heat to 140C of gas and 160C of fan.
8. Add one cup of water into the tin and cook for another two hours.
9. Meanwhile, heat the remaining oil in a saucepan. Cook the ginger until it turns golden brown, for approximately 2 minutes.
10. Drop in the plums, the reserved mixture of spices, star anise, cinnamon, sugar and the vinegar.
11. Cook the mixture for 15 minutes until it turns thick in texture.
12. Remove the pork from the oven and pour the prepared sauce all over the slices.

6. Next, remove the foil and increase the heat of the oven setting to make the pork’s skin crispy. Do this for 30 minutes.
7. Then, steam the pak choi and add some sesame oil.
8. Slice the cooked pork and arrange the pak choi and the pork in a plate. Add the steamed rice and pour the sauce all over.
