Ingredients:
For the Pie Crust:
2 cups of sifted all-purpose flour
1 teaspoon salt
2/3 cups of chilled shortening or margarine
1/4 cup cold ice water
Pie plate
Wax paper

2 cups of pureed pumpkin
1 and 1/2 cups of evaporated milk
1/2 cup of brown sugar
1/4 cup white sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon grated ginger
1/2 teaspoon grated nutmeg
1/2 teaspoon cloves
1/4 teaspoon all-spice

Instructions:
1. To make the crust, combine the flour, salt and chilled shortening in a bowl.
2. Using two forks, mix the flour and shortening until they form some pea-sized crumbs.
3. Gradually, add in the ice cold water until a ball of dough is formed. Let the dough rest and chill for 30 minutes to an hour.
4. In a clean working surface, roll out the dough into a round shape that is slightly larger than the pie plate. Dust the surface with flour if the dough sticks.
5. Transfer the unbaked crust into the pie plate and fit carefully; however, do not stretch the dough to prevent it from tearing. Place the wax paper on top of the dough and put the dried beans on top of the wax paper.
6. Bake for 10-15 minutes in a pre-heated 400 degree Fahrenheit. Remove from the oven and discard the beans. Set aside the cooked crust and let cool.
7. To make the filling, combine all the filling ingredients in a sauce pan and cook in a low fire for 10 minutes or until thick. Keep stirring constantly to prevent the mixture from sticking into the bottom of the pan.
8. Let the filling cool and pour into the pre-baked crust. Bake for another 25 minutes or until crust turns golden brown. Let cool and chill for overnight to let it set. Serve cold or warm.
