• Medium potatoes, 330g
• Spring onions, 2 pieces
• Salt and ground black pepper
• Flour, 1 teaspoon
• Butter, 1 knob

• Smoked salmon, 3 slices
• Sour cream, 2 teaspoons
• Fresh chives, one bunch

Instructions:
1. Fill up a large stockpot with water. Place the potatoes and let boil until cooked.
2. Use tongs to remove the potatoes from boiling water. Drain the potatoes and allow them to cool for a few minutes.
3. Grate each potato using a cheese grater. Transfer the grated potatoes in a mixing bowl.
4. Chop the spring onions finely and mix with the potatoes.
5. Add in the flour, some butter and the seasonings. Mix thoroughly.
6. Divide the mixture into four balls with similar sizes and pat these flat, while retaining the round shape.
7. Place in a covered plastic container and refrigerate for several hours or overnight.
8. Next, melt the butter in a frying pan, over medium heat settings.
9. Put in the potato cakes and fry each side for 4 minutes before turning to cook the other side.
10. When the potato turns golden brown in colour, remove from the pan and drain excess oil with paper towels. Set aside.
11. Then, boil the eggs for about 4 minutes, just enough to make them soft-boiled.
12. On a plate, arrange two potato cakes and top these with the smoked salmon. Put the shelled soft-boiled eggs and spread sour cream on top.
13. Lastly, sprinkle some chives to garnish the dish.

2. Place the salmon skin side down on a wire rack. Put this rack on the hob and use medium heat setting.
3. Cook the fish for about 10 minutes until well done.
4. While waiting for the fish to cook, prepare the salsa by mixing all the ingredients in a bowl.
5. Then, leave the tin closed for about 3 minutes to let the remaining smoke penetrate some more to the salmon.
